Four-Color Vegetarian Burger

Ingredients

  • Delicious  plant-based steak
  • 4 slices of cheddar (or a plant-based alternative, such as Violife slices)
  • 2 burger buns (bonus points if you get them from your local bakery!)
  • 1 jar of Les 3 Chouettes red onion pickles
  • 1 large yellow onion
  • 1 jar of sun-dried tomatoes
  • 200 g of arugula
  • 4 tablespoons of vinegar (cider or balsamic, whichever you prefer)
  • 2 tablespoons of granulated sugar
  • A little fat (butter or margarine)
  • Salt, pepper

The Step-by-Step Recipe

  1. Prepare the yellow onion compote: Peel and thinly slice the onions, then sauté them over low heat with a pat of butter or margarine until they begin to brown. Add the sugar and stir, allowing them to caramelize slightly. Finally, deglaze with balsamic vinegar and wait for it to evaporate. Set aside.
  2. In a hot skillet with a generous pat of butter or margarine, cook the veggie steak over medium heat for 4 minutes on each side until it's nicely browned. Add 2 slices of cheddar (or a plant-based alternative).
  3. Lightly toast the burger buns in a toaster.
  4. Assemble the burger: on the bottom bun, place a few leaves of arugula, arrange 2 drained sun-dried tomatoes, a few red onion pickles, and then the veggie patty. Finally, spoon on a tablespoon of onion compote and top with the top bun.
