Indian-Style Strips
Ingredients
- 2 packages of HappyVore Vegetable Aiguillettes
- 2 onions
- 1 can of peeled tomatoes
- 1 clove of garlic
- 1 bunch of cilantro
- 1 tablespoon of turmeric
- 2 tablespoons of tandoori spice
- 4 cardamom seeds
- 1 star anise
- 100 grams of cashews
- 1 small piece of ginger (about 10 grams)
- 3 tablespoons of coconut oil
- 10 cl of coconut milk
The Step-by-Step Recipe
1/ Peel the onions, garlic, and ginger. Coarsely chop the cilantro. Set aside the stems.
2/ In a blender, blend the garlic, ginger, 1 onion, spices, peeled tomatoes, cilantro stems, and cashews until smooth.
3/ In a skillet, sauté the vegetable strips in coconut oil with the anise and cardamom seeds. Once the strips are golden brown, add 1 thinly sliced onion, followed by the sauce. Stir to combine and let simmer gently for 15 minutes, stirring occasionally.
4/ When the dish is almost done cooking, add the coconut milk. Stir, then add a tablespoon of coconut oil. Adjust the seasoning with salt, pepper, and a tablespoon of sugar if needed.
7/ Serve hot with basmati rice and sprinkle with fresh cilantro and a few cashews.
